I unfortunately missed the chance to unlock them as I only really played the game at launch and just started again. I really dig the realistic design but unfortunately the challenges dont show up in the operator menu. Did I miss my chance during the games life cycle?

You might find some Mil-Sim skins in the store but the ones from the Battle Pass are not unlockable anymore.
A limited number of mil-sim skins can be obtained for MW (2019) by purchasing the associated shop bundles. All mil-sim skins obtained through battle passes, including the battle pass missions, were only available during the associated seasonal battle passes. At this point in time, it is not possible to unlock any mil-sim skins for MW (2019) through gameplay challenges without having already unlocked the battle pass missions through MW (2019)’s battle passes.
