It is worth noting that the prelude to each lore story is that it was a time before there was a distinction between humans and Pokemon. Essentially, “human” was another species of Pokemon at the time the myth takes place, just like in real life how if you far back enough our ancestors were animals.
It is weird but it matches what we see in the games because in-game you can breed different species of Pokemon together already
