Dino crisis 2 demo. With game shark codes was able to disable the timer giving you the ability to play the entire game. Which was a different version of the official release.

2005 Need For Speed: Most Wanted had a great demo. Hours of never ending police chases on that blue Dodge Viper.

No denying BF2 was great demo and full game however, battlefield 1942 being one of its predecessors had beautifully made maps for a 2002 released game and just to mention some of the naval maps had many different types of driveable ships and such. (I.e. submarines!) oh yea it also had two of the most amazing expansions my favorite being the 1st expansion however the second was great too. Battlefield 1942: The Road to Rome (adding the Italian Front) and Battlefield 1942: Secret Weapons ( added prototypical, experimental, and rarely used weapons and vehicles (such as jet packs)of WWII.
There still exist private servers for many of these earlier BF online multiplayer games to this day. Which goes to show their greatness.

AOE 1… The demo contained a full campaign unique to the demo only. Thus most I knew kept that demo around for years, inc me.

Ico. I played that demo round and round until I could afford to buy the full game. Such a piece of art.
Also the Arx Fatalis demo which for some weird reason included the whole game and the demo limitations could be circumvented by using a patched executable.
