Help with overclocking a 7700k

I haven't overclocked since the Athlon 64 days and am overwhelmed with where to start with manually overclocking. I'm a novice when it comes to overclocking but I can follow directions. I have a Gigabyte z270mx Gaming 5 motherboard and an i7 7700k bottlenecking a 2080 TI Founder's Edition. I have followed the "easy" method for overclocking in:

https://viewer.joomag.com/gigabyte-z270-overclocking-guide-gigabyte-200-series-overclocking-guide/0767815001483933769

I recently delidded with Conductonaut LM and swapped my Cryorig H7 for an Arctic Liquid Freezer ii 240 argb AIO. I enabled XMP so my RAM (G.Skill Ripjaws V Series (Intel XMP) DDR4 32gb (2x16gb) 3200MT/s CL16-18-38 1.35V) is running at 3200mhz. I disabled integrated graphics, VT-d, Intel Speed Shift Technology, Enhanced Halt (C1E), C3 State Support, C6/C7 State Support and C8 State Support per the guide. I did the cpu upgrade option in the bios in increments and have been at 5ghz for a week without any stability issues.

The instructions outline in the "advanced" section how to begin manually overclocking once you find out when it's unstable… so where do I start if it's not? I found a thread on here from 2 years ago titled "safe overclock combination for i7 7700k Kaby Lake" and "cakeyogi" replied with clear instructions as shown in the screenshot.

Are these accurate and a good starting point? They don't mention anything about uncore or vcore and I have a very vague understanding of what they do and no idea when to adjust them. What about CPU Vcore Loadline Calibration setting? What stress test(s) and parameters should I use? Both of these instructions state prime95, which I have and do use, but I've read so many people on here claim it's unrealistic and shouldn't be used, especially on Kaby Lake cpu's.

Any input, clarification and/or recommendations would be greatly appreciated! I know I'm overdo for an upgrade… I'm just trying to optimize this build as much as possible until I have the money, plus it's fun. Thank you!

I had a 7700k and I ran it at 5.0 ghz with 1.4v with 5.0 ring ratio. It was avx stable and was also delidded on an nh-d15 cooler. It ran very cool but I could not get avx stable past 5.0 ghz
